If the cause of your weight problem is a sick or failing endocrine system, then we need some nutrient-dense live food to heal it. The vegetable family has several qualities that aid in healing. Eaten raw, vegetables are one of the most concentrated sources of vitamins, minerals and plant chemicals. They are high in fiber, which buffers the fat maker insulin. They are also low in sugar, even though they are called a carbohydrate. Heat destroys nutrients. If the goal is to heal your body, then the more raw vegetables you eat, the faster this process will occur. Cooked vegetables will take away from the healing process. If you steam your vegetables, make sure they are lightly steamed, and also eat raw vegetables during the day.

Ideally, you would consume 80 percent raw vegetables. Vegetables have excellent ratios of high potassium and very low sodium. On the following page is a short list of high-potassium foods in milligrams. If you look at this chart, you can see that vegetables in general have very little sodium and high amounts of potassium. However, there are some vegetables that have high levels of sodium as well as high levels of potassium, such as beets and celery. These vegetables are beneficial for people with calcium deposits in their bodies, like gallstones and kidney stones, as sodium helps to balance the excess calcium.

The majority of overweight people are severely dehydrated in their cells and waterlogged outside their cells despite drinking lots of water. It sometimes takes up to six months of eating lots of vegetables to replace the potassium within the cells. You have to get it from food; taking a potassium supplement can’t correct this problem. Processed, refined, boxed and canned foods do just the reverse: they create fluid retention because of the high sodium and low potassium.


Potassium helps lower insulin. Without enough potassium your insulin could increase and keep you out of fat burning. Potassium is also needed to adequately hold protein in your body (especially in the muscles). The electrical charge and energy of your cells are dependent upon incoming potassium. The best source of potassium, better than bananas, is vegetables.

Cruciferous Vegetables

Cruciferous vegetables have some very interesting properties; they are anti-estrogen, anticancer, anti-toxic chemical, and greatly help the liver in its ability to detoxify. Because estrogen is fat making and blocks the fat burning growth hormone, eating many of these vegetables can help weight loss. Some examples of cruciferous vegetables are: cabbage, brussels sprouts, broccoli, cauliflower, kale, radishes, turnips and turnip greens, bok choy, watercress, collards, mustard greens, and rutabaga.
